Alright guys this was a long time coming. Welcome to the food thread! Where we can talk about food, recommend food, post recipes, post results of recipes lol. So to kick things off I'm going to share a recipe I made today for dinner~
Santa Fe Chicken
2 Chicken breasts, halved
1 14oz can of chicken broth (or 2 cups of broth from a larger container)
1 can of corn (or half a bag of frozen)
1 can of black beans (pinto beans are also good if you don't like black)
1 can of diced tomatoes with chilies
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cilantro
1 teaspoon cumin
1 cup of scallions/green onions, separated
Salt to taste
1. Combine all ingredients with the exception of the salt, chicken and half a cup of green onions in a crockpot and mix. Be sure to drain liquid out of canned items.
2. Season chicken with salt. Add chicken to mixture.
3. Cook on Low for 10 hours or High for 5 hours
4. 30 minutes before the cooking time is up, remove chicken from mixture and shred it. Put it back into the mixture.
5. Serve over rice or in tortilla with other half of green onions on top. This mixture will be soupy so its best to use a slotted spoon for serving.
*Other good toppings are sour cream, cheese, Sriracha or other hot sauces
*When I made this I skipped the salt seasoning because chicken broth has a ton of sodium in it so I thought that would make it salty. I chose to season the chicken with pepper and red pepper instead. THIS WAS A MISTAKE! The mixture was in desperate need of salt and I ended up salting it, probably more so than I would have if I had just seasoned the chicken.
*I recommend using fat free chicken broth as it is only a quarter of the calories as regular broth.
I put fat free sour cream, raw green onions, Chipotle Tobasco and Sriracha on mine :3
